“Nakiri” means vegetable knife in Japanese, and this vegetable knife from the Cangshan TC Series is ideal for slicing and dicing all types of vegetables. Use the straight blade to make push cuts quickly and easily. The blade of a Nakiri is thinner than the blade of a cleaver.
Cangshan TC Series blades are forged from Swedish Sandvik 14C28N steel. This high-alloy steel holds an edge five times longer than German steel, with a Rockwell hardness of 59. The patent-pending tapered full tang results in a balanced and comfortable knife. Sharpened to a 16-degree edge, each knife comes with a carbonized solid Ashwood magnetic sheath. Handles are made from a food-safe polymer, with a mosaic rivet. Winner of a 2018 Red Dot Design Award and a 2018 German Design Award.
