This fillet knife from the Cangshan TC Series is specially designed for deboning and filleting. The long, thin blade is curved to help separate meat from skin and bones. Store and protect this knife with the included leather sheath.

Cangshan TC Series blades are forged from Swedish Sandvik 14C28N steel. This high-alloy steel holds an edge five times longer than German steel, with a Rockwell hardness of 59. The patent-pending tapered full tang results in a balanced and comfortable knife. Handles are made from a food-safe polymer, with a mosaic rivet. Winner of a 2018 Red Dot Design Award and a 2018 German Design Award.

Hand wash and dry immediately. Made from Swedish steel in the renowned knife district in Yangjuiang, China.
