The blades come apart for easy cleaning too. The herb shears are designed for handling delicate herbs. The blades are sharpened to a 16-degree angle for a fine cutting edge that won’t bruise herbs. Shun Premium Kitchen Shears are made from high-carbon, molybdenum-vanadium stainless steel with elastomer grips. Carbon offers strength and durability, and vanadium and molybdenum provide corrosion and impact resistance. Shun Herb Shears are made from Japanese 402J2 stainless steel with elastomer grips, suitable for both right- and left-handed use. The blades come apart for easy cleaning.
