The blade of a Santoku is thinner than the blade of a chef’s knife. The hollow-ground indentations create air pockets to push food away from the blade as you work, making this knife ideal for slicing food that tends to stick to knife blades.

The Messermeister Custom collection reinvented the way German knives are made. The modern design features interchangeable handles and hardware that allow you to customize your cutlery to your changing style. The blade is made from cold rolled X50 German stainless steel with 15-degree edge and 58 Rockwell hardness. The ceramic stonewash finish aids in smooth cutting and stain resistance. The base model handle is made from reclaimed canvas and natural non-phenolic resin, with titanium-coated triple rivets.
