This Santoku knife from the Cangshan TC Series performs the three essential cutting tasks a Santoku is named for: slicing, dicing, and mincing. A Santoku knife handles the same work as a chef’s knife, but it features a thinner spine and blade, as well as a blunt tip and straight edge.
Cangshan TC Series blades are forged from Swedish Sandvik 14C28N steel. This high-alloy steel holds an edge five times longer than German steel, with a Rockwell hardness of 59. The patent-pending tapered full tang results in a balanced and comfortable knife. Sharpened to a 16-degree edge, each knife comes with a carbonized solid Ashwood magnetic sheath. Handles are made from a food-safe polymer, with a mosaic rivet. Winner of a 2018 Red Dot Design Award and a 2018 German Design Award.
